Ingredients
  

  • 1 ⅓ cups cherry tomatoes halved
  • 2 cups cucumber diced
  • 1 cup olives sliced
  • ¼ cup onion thinly sliced
  • 2 cups cooked quinoa
  • 3 cups rotisserie chicken chopped
  • 4 tbsp feta cheese crumbled
  • 4 tbsp tzatziki sauce
  • 4-8 tbsp olive oil
  • 8-12 tbsp lemon juice
  • 2 tsp garlic powder
  • 2 tsp dried oregano
  • 2 tsp black pepper
  • Salt to taste

  • Combine 1-2 tbsp olive oil, 3 tbsp lemon juice, ½ tsp oregano, ½ tsp garlic powder, ½ tsp black pepper and salt to taste at the bottom of four 32-oz mason jars.
