How To Make Maple Dijon Salmon Sheet Pan Meal Prep
Preheat your oven to 375 degrees Fahrenheit and line a large baking sheet with parchment paper.
Slice all the broccoli, bell pepper, red onion, and baby potatoes.
Add the baby potatoes to a pot, boil for 5-7 minutes, and then allow them to cool. Then, toss the veggies in olive oil, salt, pepper, thyme, and paprika.
Pat the salmon dry and place the filets on the sheet pan. Season lightly with paprika, salt, pepper, and thyme.
Place the sheet pam in the oven and bake for 18-20 minutes or until the salmon is cooked through and veggies are tender and slightly charred on the edges.

In a small bowl, whisk together the Dijon mustard, maple syrup, olive oil, lemon juice, salt, and pepper.
